    Thanks to Dr. Oz, I will be making all of the following “dupes.”

    Creamy Zucchini Fries – A Cheat for Cheese Fries

    Ingredients

    1 lb zucchini

    1/2 cup whole wheat panko bread crumbs

    1/4 grated Parmesan cheese

    2 or 3 eggs

    Directions

    Preheat your oven to 425°F and line a baking sheet with aluminum foil. Spray the sheet with non-stick cooking spray and set aside. Cut zucchini into thick “fries” and blot dry. Whisk the eggs together. In a separate bowl, mix the grated Parmesan and bread crumbs together. Dip the zucchini in the eggs and then shake the sticks to remove any excess egg. Roll the zucchini in the bread crumbs and then place them on the prepared baking sheet. Repeat with the remaining zucchini, making sure the zucchini pieces aren’t touching each other. Bake for 10-12 minutes in the prepared oven then remove from oven, flip the fries, and bake for another 10-12 minutes or until the zucchini is not soggy and the coating is crisp and golden brown.

    Frozen Banana Nut Bar – A Cheat for Ice Cream

    Ingredients

    1 banana

    1/4 cup crushed nuts of your choice

    1/4 cup crushed dark chocolate chips

    Directions

    Put the banana on popsicle stick, roll it in the crushed nuts and chocolate chips. Cover it in saran wrap, stick it in the freezer for up to 12 hours, until it’s completely frozen. Enjoy!

    Blueberry “Pancakes” in a Bowl – A Cheat for Pancakes

    Ingredients

    4 oz vanilla Greek yogurt

    1/2 cup of puffed wheat cereal

    1 handful of blueberries

    A dash of cinnamon

    1 tbsp organic maple syrup

    Directions

    Mix the yogurt puffed cereal and blueberries in a bowl. Mix in a dash of cinnamon to taste. Heat up the 1 tbsp organic maple syrup in the microwave and pour it on top of the whole mixture. Enjoy!

    Happy Monday!

    I woke up craving runny eggs. They were so good and totally hit the spot.

    Figured I’d get something up before I go for a run.

    A few weeks ago while Stu was on vacation we did a lot of house stuff. Whenever we go into Lowes, I want to walk out with everything. We got a bird feeder, grilling supplies, and the best buy of all??

    My new big leafed plant.

    This is as green as I go.

    Taaa-daaaa!!

    I took such pride in our old plant. I bought it at Ikea 8 yrs ag when it was itty bitty, and it grew to be over 8 ft tall. Unfortunately we couldn’t move it down to Dallas so it’s still in our old house. Whoever moves in gets to be the proud new owners of her :0)

    My new plant will thrive. The room it’s in gets a ton of light and I can already see 4 new leaves unraveling. It has lots of room to grow big and tall. Yay!!

    Today was all about food flinging and flowers.

    Case in point:

    To say this bunch was a steal would be an understatement. I mean $6? Seriously? I love you Kroger flower shop.

    At dinnertime, Zach decided it would be cool to fling the spoon (loaded with food) out of mommy’s hand.

    new facial mask? Zach could be on to something.

    Zach’s leg warmers came in the mail today. Now you may be wondering why I’d order him leg warmers when we live in sunny warm Texas? Two words: air conditioning. Everywhere you go around here, there is an AC blowing out freezing cold air. So while it’s hot as balls outside, inside (pretty much everywhere we go) has the air on. These are great to have in my diaper bag. You never know when we might need them :0) Thanks to Brie, Zach’s friend’s mom (from our little bundles class) for turning me on to these.

    I think Zach could be the next big leg warmer model.

    As you can see, Zach is teething. I’d like to think of his drool as an every day accessory.

    I forgot what site I ordered these from but if you just google “baby leg warmers” a ton of sites will pop up. I paid $7.50  pair. Not bad.

    My craving for Einstein bagels returned today. I bought a dozen and had an everything with ham and cheese for lunch. It kicked ass.

    carbs!

    I should also mention that I didn’t run today. Fail.

    Tomorrow’s a new day.

    Oh, and before I forget, look what I ordered for Z’s room. Thank you pinterest/etsy.

    Speaking of pinterest. I think you should follow me. I’ve been addicted working super hard on my boards.
